Zucchini – broiled.

This might be my favourite way to eat zucchini at all times of the year, (okay baring zucchini noodles at Nourish) and it is also one of the easiest sides to prepare. 

Turn your oven to “broil.” 

Wash and dry your zucchini (for two people I’d fix three medium to large zucchini so that there is enough for lunch the next day.) 

Slice diagonally on a bias cut into 1 cm slices. 

Place on a baking tray, drizzle with olive oil and salt.

Place under broiler until tops begin to brown and blister, about 5 minutes, depending on the strength of your broiler. 

Turn zucchini slices over.

Repeat.

Zucchini are done. Hot, cold, on the side, on a burger, for breakfast, or drizzled with a little good balsamic – the humble zucchini shines with flavour in this easy to prepare dish.
